bossbish food: honey-yogurt fruit cups

this has to be one of the easiest, and most gorgeous snacks a boss bish needs in her life. it literally takes less than 20 minutes to doll up and create in the kitchen. by freezing each cup, you’re aiming for easy healthy choices and (naturally) sweet success, by grabbing it on the go to your next meeting, or on the way to work.

i was inspired to create this recipe when i was craving fresh fruit in the summer, and wanted to portion-out my servings of both fruit and yogurt.

ingredients:

  • 2 cups of plain, non-fat greek yogurt
  • 16 oz. strawberries
  • 6 oz. blackberries
  • 4-5 kiwis
  • 1/4 cup of honey
  • 1 teaspoon of vanilla extract
  • 12-cup muffin tin
  • 12 baking liners

wash and pat dry your fruit. now #bossup and slice away! if you’re like me, i always pick on strawberries as i cut them…some may not make it to the swimming pool of yogurt, but that’s ok! you still a winna.

now for the yogurt mix! simply pour all of your yogurt into a large mixing bowl. add in the honey and the vanilla extract then stir it up. from there, it’s easier to use an ice cream scooper to grab equal portions of yogurt (about 1/4 cup per muffin tin), and release the yogurt in each paper liner.

lastly, your daily dose of kitchen therapy kicks in! take a moment, don’t rush, and enjoy the peaceful process of artistically cascading your fruit among each yogurt cup.

this is so much fun! take some time to arrange your fruit in each cup, the color scheme is surprisingly soothing. when you’ve completed this, pop these suckas in the freezer. the night before, defrost by keeping in the fridge, or skip this step if you’re going to snack hours later.

we are always rushing through things in life, and rightfully so as busy boss bishes, but take my word, take your time! you’ll thank me later…
